I do a lot of cooking. I mean a lot! What I hate is finding a recipe online and then having to read a lengthy story just to get to the recipe.
So I’ll post the story later, for now, here is my recipe for the tastiest, most gooey and delicious brownies ever.
(These are made gluten and dairy free, but you can modify to fit your specific needs)
3/4 cup Cocoa or Cacao (I used organic raw cacao powder)
1 3/4 cup coconut sugar
3/4 tsp salt
1/2 tsp baking powder
1 cup gluten free flour of your choice ( I like any organic one)
1 cup Enjoy Life Chocolate Chips
3 Large Eggs (or egg substitute for my vegans)
1/2 cup avocado oil
2 tbsp filtered water
Mix dry ingredients together. Add chocolate chips. Then combine oil and eggs with dry mixture. Mix lightly and place in oiled 9 x 9 pan. Bake at 350 for 30 minutes. Enjoy!
Now for the story:
I’m 40 years old. I’ve been cooking since I was 6. My grandma would cook with me all the time and the first thing I ever made was brownies. I remember how proud I was. Over the years, brownies were always something we made together and enjoyed. When I left to go out of town on my first school trip to Florida in 6th grade, my grandma was there to see me off with a bag full of her delicious brownies. I ate them on the drive and tried not to cry. She was just so special.
I remember one time, not too long before she died, her and I were making brownies and I left them on her counter to cool. I came back in after a few minutes and saw my tiny grandma (she was barely 5ft tall and weighed about 80 pounds) with her back to me. I looked at the counter and saw a large piece of brownie missing and I said, “ Grandma, what are you doing?” She turned around with chocolate all over her face and said, “nothing”. I held in the laughter as I asked her if she had gotten into the brownies and she said no. We laughed and laughed. My grandma died later that year and I was only 18. I make brownies to remember her smile and what she gave me; A love for cooking too strong to die and a chance to have fun in all I do. Man, my grandma would love these brownies!
