Brussels sprouts are low in calories but high in fiber, vitamins and minerals. I know a lot of people who have never had a Brussels sprout they liked. I think they’ve never had them with bacon or maple glaze!  Also sweet potatoes are a tuber that is one of the healthiest foods on the planet. In addition to countering the effects of secondhand smoke and preventing diabetes, sweet potatoes contain glutathione, an antioxidant that can enhance nutrient metabolism and immune-system health, as well as protect against Alzheimer’s, Parkinson’s, liver disease, cystic fibrosis, HIV, cancer, heart attack, and stroke.


Here’s your recipe:



  • 2 medium sweet potatoes, peeled and diced in 1” pieces
  • 1 pound brussels sprouts, trimmed and cut in half
  • 1 tbsp. avocado oil
  • 1 tbsp. maple syrup
  • 1/2 tsp. Black pepper
  • 1/2 tsp. salt


  1. Preheat the oven to 450 F. Line a large baking sheet with parchment paper. In a large bowl, toss sweet potatoes and brussels sprouts in avocado oil and maple syrup, salt and pepper. Roast for about 30 minutes or until browned, turning half way through. ( I cook in an RV so times may vary)
  2. Add salt and pepper to taste. Drizzle with just a little more maple syrup before serving.
